Alfredo Sauce Recipe


1 cup heavy cream,
1/4 cup shredded Parmegiano Regiano cheese,
1 tablespoon un-salted butter,
1 teaspoon minced garlic,
1 pinch nutmeg,
1 teaspoon chopped parsley,
2 oz. dry white wine,
salt and white pepper to taste.

Recipe: Heat the butter in a heavy skillet over moderate heat and saute the garlic for 3 minutes. Deglaze with the white wine and add the cream. Bring to a boil and immediately reduce the temperature to just simmer the sauce for a few minutes until the sauce is reduced slightly. Add the rest of the ingredients and stir them in until the cheese is completely dissolved in the sauce. In the meantime, boil the pasta (preferably fettuccine) and toss it in the sauce until it is coated completely in Alfredo. If you decide to make fettuccine Alfredo with shrimp and/or chicken, the right time to put them in the pan is about 1 minute after the garlic. If you would like to alter the flavour, other cheeses can be used such as Asiago, Pecorino Romano, Crotonese or Grana di Padano.
