Cheese Tortellini in Blush Sauce

 

Ingredients:

300 gr. cheese filled tortellini,
1 cup tomato sauce,
1/2 cup cooking cream,
1 tablespoon butter,
1 medium zucchini, diced,
1 cup sliced mushrooms,
1/2 cup diced roasted red peppers,
1 teaspoon minced garlic,
fresh basil for decoration,
salt and pepper to taste.

Recipe: Bring 2 litres of water to a boil and boil the cheese tortellini until they are softer to touch, usually 3-4 minutes after they rise to the surface. Unless you are a hard-core pasta enthusiast, I recommend using store bought tortellini. That saves a lot of your valuable time. If you are making your own tortellini, you certainly know how to boil them, too; In a frying pan, heat the butter and sauté the vegetables with the garlic for about 4 minutes. When the zucchini are soft, add the tomato sauce and cooking cream and stir. Reduce the sauce for 2-3 minutes and add the boiled tortellini. Season the blush sauce to taste with salt and pepper. Toss well and serve. This recipe serves 3.
