Italian Style Mussels Marinara Recipe

 

 

Ingredients:

2 lb. fresh mussels,
1 cup tomato sauce,
1/3 cup dry white wine,
2 Tbsp. EV olive oil,
1 tsp. chopped garlic,
1/4 cup sliced celery,
1/2 cup diced red peppers,
1 large pinch shredded carrot,
several capers,
salt and pepper to taste.


Recipe: First, choose mussels that have been kept on crushed ice and not too many appear dead and opened. Wash them and pull out the so called "beards" if they have. In a large skillet heat the olive oil and saute the vegetables for 3 minutes at high temperature. Add the mussels and keep sauteeing until most of them have opened. Deglaze with the white wine and add the tomato sauce. Let the mussels cook in the sauce for another 3-4 minutes. Cover the skillet with a lid if the mussels are not opening completely. At the end season the mussels marinara to taste and discard any unopened mussels before serving. Sprinkle with fresh chopped parsley.
