Italian Pork Roast Recipe

 

Ingredients:

4 lb. boneless, skinless pork loin,
2 lb. new white baby potatoes,
2 Tbsp. olive oil,
1 Tbsp. Italian seasoning,
1 tsp. minced garlic,
1 tbsp. paprika,
1 tsp. garlic powder,
1/2 Tbsp. Italian herbs mix,
1 pinch cumin powder,
salt and pepper to taste.


Recipe: With a sharp knife remove half of the fat cap on the pork loin. Mix together the minced garlic, olive oil and Italian seasoning and brush all of it over the pork loin. Put the pork loin in a shallow baking dish. Season the baby potatoes with little olive oil. paprika, garlic powder, Italian herbs mix (store bought), cumin powder and salt and pepper to taste. Arrange the potatoes around the pork loin roast and cook uncovered in a preheated oven for 20 minutes at 450 F. Cover with tin foil and reduce the temperature to 375 F. Roast for another 35 minutes or until a thermometer reads 165 F. Remove the pork roast from the oven and keep uncovered for about 10 minutes for the meat juices to set. Cut to the desired thickness and serve the Italian pork roast with the roasted baby potatoes. You can use the meat juices on the bottom of the roasting pan to make a sauce or gravy.
