Mussels In Olive Oil And White Wine

 

 

Ingredients:

2 lb. fresh mussels,
4 Tbsp. olive oil,
1/3 cup dry white wine,
1/3 cup chicken stock,
1 tsp. chopped garlic,
1 Tbsp. chopped parsley,
1 shot Sambuca liquor,
1 large pinch" Italian mix" dried herbs,
salt and pepper to taste.


Recipe: When you are choosing mussels from the store, make sure that they are kept over crushed ice and appear fresh and alive. Wash the mussels under cold running water and remove the "beards", the hairy things that sometimes stick from their shells. Heat the olive oil in a large skillet and saute the garlic for 1 minute. Add the mussels and saute them until most of them are open. Pour the Sambuca in the skillet and let it catch fire. Deglaze with the white wine and add the chicken stock, parsley and dried herbs. Bring the sauce to a boil and toss the mussels in the skillet from time to time for about 3-4 minutes. Season to taste and serve. Pour the white wine sauce over the mussels.
