Pasta Spaghetti in Roasted Tomato Sauce

Recipe: Mix the tomatoes, fresh basil and oregano, and pour them in a roasting pan. Spread the onion and garlic on top of the tomatoes and sprinkle with the olive oil. Season with salt and pepper to taste and put the uncovered roasting pan in a preheated oven at 350 F. Roast the tomatoes without stirring until you notice the first burnt flakes to form on top. Stir the tomato sauce and roast for some more until it is reduced by almost half. Pour the roasted tomatoes in a saucepan and blend them with a stick blender. Do not bother to remove any burnt skins from the tomato - they will add nice smoky flavor to the roasted tomato sauce.
