Veal Scallopini Recipe

 

Ingredients:

4 veal scallopini, about 2 oz. each,
1 handful of fresh baby spinach,
1/4 cup table cream,
5 cremini mushrooms, sliced,
1 clove garlic, chopped,
1 Tbsp. chopped onion,
50 ml. dry white wine,
1 Tbsp. all-purpose flour,
1 tbsp. butter,
salt and pepper to taste.


Recipe: Heat the butter in a large heavy skillet; dredge the veal scallopini with flour and saute them in the butter for 1 minute on each side. Remove the veal scallopini from the skillet and keep them aside in a plate. Add the garlic, cremini mushrooms and onion to the skillet and saute for 2 minutes. Add little more butter if needed. Add the spinach and saute for 1 minute more; deglaze with the white wine and pour the cream. Bring to a boil and return the veal scallopini to the skillet with the sauce. Reduce the sauce slightly and season to taste with salt and freshly ground black pepper. Serve the veal scallopini with the mushroom and spinach sauce on top and with a side of mashed potatoes and sauteed vegetables.
