Vegetarian Risotto Recipe
Ingredients: 1 cup risotto rice, 2 cups chicken (or vegetable) stock, 1 tsp. chopped garlic, 1 small onion, chopped, 2 tbsp. olive oil, 1 tbsp. butter, 1 tbsp. chopped parsley, 1 cup button mushrooms, quartered, 1/2 cup snow peas, 1/2 cup broccoli florettes, 1 red pepper, diced, 3 oz. dry white wine, 1/3 cup grated Parmesan cheese, 1/4 tsp. truffle oil, salt and pepper to taste. Recipe: In a large skillet heat the butter and olive oil and saute the onion and garlic for about 3 minutes. Add the vegetables and saute for 5 minutes more. Deglaze with the white wine. Boil the rice until half-cooked, rinse it and add it to the vegetables in the skillet. Add the hot stock and cook stirring until the stock is absorbed. Add the truffle oil, parsley and grated Parmesan cheese, and season to taste with pepper and salt if needed. Savour all the amazing flavors of the Italian and Mediterranean cuisines!!! |
